The Harvest
The harvest date depends on the maturity of the grapes and their sugar and acid content. For the past 15 years we have harvested 90% of the estate's vineyards mechanically. Using this technique we can harvest the different parcels of vineyard as and when each one arrives at optimum ripeness.
