Burgeoning
: This period can vary from mid-March to mid-April, depending on the
temperature. During this period the vines enter a fragile and vulnerable
stage, where we have to be vigilant for the dangers of spring frosts. |

Flowering
: This takes place in June. The moment of flowering determines the
harvest date, as the grape harvest takes place around 100 days after flowering. |

Grape
formation : The moment when the flowers transform into tiny grapes.
This usually happens in the month of July. From June to July, we trim the
vines and treat them against their enemies like mildew and oidium. |

Grape colour-change and Maturing : August is the period of 'véraison'
- the moment when the skins of the grapes begin to change colour - they
change from green to golden. And during the ripening process the grapes
continue to swell, undergoing profound changes and increasing their sugars.
From then to harvest-time, we are particularly attentive to the condition
of the bunches of grapes, keeping a close eye on their development. |
